My daughter loves chocolate and mint together. When it was her birthday, I surprised her at school with these mint chocolate chip cookies to share with her friends. They were a hit! Her friends told her they were the best cookies they had ever had. That is really saying something since her friends love my cookies. I developed this mint chocolate chip recipe to make a lot of cookies. It will yield approximately 4 dozen 3-inch diameter cookies, perfect for parties and get-togethers.
The additional egg yolk and the combination of baking soda and baking powder create a mint chocolate chip cookie that is chewy and delicious. I prefer Andes Chocolate Mint Baking Chips to other mint chip varieties. Andes mint chocolate chips pair beautifully with Trader Joe’s Semi-sweet Chocolate Chunks or Nestle, Toll House, Semi Sweet, Chocolate Chunks. However, you can also chop up your favorite chocolate bar to get the chocolate chips. I recommend Trader Joe’s Pound Plus Milk Chocolate bar.
How to Make Mint Chocolate Chip Cookies
First, melt the butter in a sauce pan. Next, mix the sugars, eggs, vanilla, sour cream and cocoa powder. Then combine the rest of the dry ingredients together. Mix the dry ingredients with the wet ingredients. That is all easy enough.
Next, add the chocolate chunks and the mint chocolate chips. Stir in gently. Trader Joe’s chocolate chunks are smaller than Nestle chocolate chunks. I prefer these smaller chunks because they are closer in size to Andes mint chips. In addition, the smaller chunks don’t have a problem being incorporated into the cookie.
Bake the cookies either on a silicone baking mat or on a high quality steel cookie sheet.
Finally after cookies are baked, cool them completely.
Secret Method to Make the Best Mint Chocolate Chip Cookies Ever
The best tasting cookies are the ones made with patience. Follow my secret step after the cookies are cooked and cooled.
First, wrap the cookies in plastic wrap. I usually wrap them in stacks of 5. In addition, I wrap them completely 3 or 4 times to completely seal them.
Next, place the cookies in an airtight container.
Then place the cookie container in the freezer overnight.
The following day, take the cookies out of the freezer and let them thaw for about two hours.
Finally, take the plastic wrap off and enjoy amazing cookies.
Try my secret method. You won’t regret it. In full disclosure though — we usually do eat a couple of cookies the day we make them. It is difficult to not snag a taste. But I freeze the majority of the cookies using my secret method and they taste even better the second day.
