I recently learned how to make apple syrup without sugar, using apple juice as the only ingredient. This apple syrup is thicker than apple juice, with the consistency of a thin honey when processed for the minimal amount of time. Simmer it even longer and it will get even thicker and be the consistency of regular honey. Be sure not to go too long, however, or you will end up with a hard candy mess. Yes, this is experience speaking.
Making apple syrup reminded me a lot of making pear butter. Reducing the liquid in apple syrup was similar to the way the liquid is reduced in pear butter. The result in both cases was a highly concentrated flavor in both the pear butter and the apple syrup.
Apple syrup is tasty when used on pancakes, waffles or French toast. Add the syrup as a sweetener or substitute for honey, sugar or maple syrup. There is a definite apple flavor, so be aware that you will not just get a sweetener, but you will also get the apple flavor.
The sweet apple flavor that comes from apple syrup is perfect when you want to add some additional apple flavor, but don’t want to add more apples to the recipe. Use it in homemade apple pies for a concentrated apple taste.
In addition to sweet dishes, savory meals also benefit from the sweet apple flavor in apple syrup. Pumpkin Soup with Coconut Milk is one savory recipe that calls for just a touch of apple syrup, and boy does it really add something to the dish.
Apple Syrup is also an important ingredient in a homemade glaze used for meats such as pork and turkey.
One thing to keep in mind: Don’t plan on making apple syrup the day you need it. After you learn how to make apple syrup without sugar, make it ahead of time and store it in the refrigerator. How to Make Apple Syrup Without Sugar
It is easy to make apple syrup without sugar. Begin with half a gallon of apple juice or apple cider (64 oz.). It will eventually reduce down to 16 oz. or 8 oz. of apple syrup, depending on the consistency you are after. I usually reduce the apple juice down to 8 oz. This is the perfect amount for a honey-like consistency. There is minimal difference in the time it takes to reduce the juice to syrup, whether concentrated or non-concentrated apple juice is used.
But be sure to keep an eye on the pan, especially after simmering for 60 minutes.
First, pour the apple juice into a pan and turn on medium high heat. Leave the pan lid off. Next, bring the juice to a simmer. This will take 10-15 minutes depending on how hot your stove top is. Then keep the apple juice simmering for approximately 90 minutes.
The juice will reduce and darken as it simmers. Check after 60 minutes. The juice should have been reduced to 16 oz. If not, return to the pan and continue simmering. Check every 10 to 15 minutes until the juice reaches the right consistency. The gallon of apple juice will be reduced to 1 cup of apple syrup when it is finished.
*Note: I usually keep the temperature at medium heat. However, if I feel the juice is boiling too rapidly, I will reduced the heat slightly.
